Chocolate is made with cocoa (cacao), mixing with fats like cocoa butter, milk and sugar. There are different types of chocolates. Chocolates are categorised based on its taste, the amount of cocoa powder and milk used to make the chocolate. Types of Chocolates: White Chocolate
This type of chocolate is made with cocoa butter, sugar, milk, emulsifier, vanilla and sometimes other flavourings. White chocolate has mild and pleasant flavour. This chocolate is used to make other desserts. In some countries, white chocolate is not considered as chocolate because it does not contain any solid cocoa components. The Milkybar chocolate by company Nestle is a popular example of white chocolate.
Types of Chocolates: Dark Chocolate
This type of chocolate is also called as plain chocolate or black chocolate. Dark chocolate is made by adding fat and sugar to cocoa to a very lower amount of milk or sometimes no milk at all. This type of chocolate has a sharp flavour. It is eaten as it is or it is used to make other chocolate based food items like cakes, pastries, cupcakes etc. Dark chocolate has 70% to 90% cocoa solids amount. Bourneville is one the popular dark chocolate name in India.
Types of Chocolates: Milk Chocolate
Milk chocolate is the highest amount of chocolate eaten worldwide. This type chocolate contains a high amount of milk in form of liquid milk, condensed milk or milk powder. It contains 10 to 12% milk solids in it. This type of chocolate is not often used for making other food items.
Types of Chocolates: Semi-Sweet Chocolate
Although there is not a specific definition of “semi-sweet” but the sugar quantity is usually half of the cacao amount. Semi-Sweet chocolate chips are mostly used for baking other food items, especially in cookies.
Types of Chocolates: Unsweetened Chocolate
Unsweetened chocolate has pure chocolate with most of the cocoa butter removed. This type of chocolate usually has a low amount of sugar. They usually have a mellow flavour and red kind of colour.
Types of Chocolates: Bittersweet Chocolate
Bittersweet chocolate usually has 35% pure cacao content and very low amount of sugar. The sweetness and colour intensity of this type of chocolate varies by manufacturer’s recipes and source of cacao beans.
